Hearty greens such as kale, collards, chard and spinach are packed with nutrients. Luckily, eating them raw is not the only way to enjoy these life-giving vegetables.

Add this recipe for sauteed greens to your repertoir of easy and versatile side dishes that make excellent use of leafy greens and go with almost anything.

Any combination of hearty greens by the bunch or bag, including:

  • Kale
  • Collards
  • Chard
  • Spinach
  • Baby bok choy
  • Tatsoi

Additional Ingredients

  • Sea salt, pink salt or soy sauce to taste
  • Olive oil or sesame oil
  • Crushed garlic clove

Directions

  1. Wash, then chop the wet greens to the desired texture. Greens shrink quite a big when cooked, so you'll want to prep about double the amount of raw greens to achieve the desired amount of cooked greens. A kale bunch, cooked, will serve about 4 people as a hearty side.
  2. Heat a pan on medium-high heat.
  3. Once warm, add the oil and wet greens to the pan.
  4. Cook until the greens are soft and have reached their deepest green color.
  5. Add the crushed garlic just before the greens are done and continue sautéing for another 30 seconds or so.
  6. Remove the greens from heat and drizzle with lemon to serve.
  7. Substitute salt and olive oil with soy sauce and sesame oil for a delicious alternative.
